Obviously I have been challenged when it comes to being consistent with the blog. Be that as it may, I am going to try to post menu plans in a weekly format. I will link to recipes when I can. By that, I mean when I learn how....
I usually make a big meal that can be portioned and some frozen for another week. It usually consists of a more involved recipe or something I have been meaning to try. The latter often leads to pizza. anyhow..

Healthy and makes about 40-45 shells. I freeze most of them on a cookie sheet and then bag up when frozen. You then can take out as many as you need later on. I top the shells with Zesty Pasta Sauce, which is the sauce from this recipe http://www.tastebook.com/recipes/2382953-Zesty-Pasta-Bake. But you can use whatever you like.
Stuffed shells served with garlic bread-sticks and spinach salad.

Herb Rubbed Pork Loin
I used 2 fat boneless pork chops and 1/2 of the herb rub in this recipe: http://www.tastebook.com/recipes/1960891-Herb-Rubbed-Pork-Loin
I then sear both sides of the pork chop and put into a 375 oven for about 30 minutes.\
Squash ravioli is in the freezer at the store.
Broiled Parmesan Tilapia (Cheesy Fish)

The recipe makes 12 or so. I usually make the whole sauce part of the recipe and put half in the freezer. So this weeks enchiladas will be made using leftover rotisserie chicken and sauce from the freezer. Easy but messy.
